Couscous and Yam Salad April 30, 2007

Even though kickpleat’s Couscous and Yam Salad recipe lacked a picture, I was intrigued. It sounded like another perfect dish for this in between winter and spring time. It was light, with a nice tangy dressing, but still had warm, soothing, sweet textures and flavors.

layered vegetable quiche April 28, 2007

During my search for Passover foods at Gluten Free by the Bay, I came across this recipe for Purple Potato Quiche at Gluten-Free Goddess.  I really wanted to use purple potatoes because I thought it would just be the prettiest thing in the world.  However, I could not find any purple potatoes.  Instead I used a variety of other potatoes: garnet yams, red potatoes, and sweet potatoes in addition to red peppers, zucchini, and carrots.  The combination of all these great vegetables with the rich, cheesy filling made it the perfect dinner for the beginning of spring. I served it warm with a mixed green salad.

I am now officially done with my first year of graduate school! I have been told that it takes a while for this to really sink in. I think when I start cleaning my office, dragging my library books back to the library, and filing away all my email, I will begin to feel more of a sense of accomplishment.  For right now, I am happy to be posting some new pictures for recipes which I will share in the next few days:

And, for dinner last night I made this yummy couscous with sweet potatoes, onions, carrots and green pepper:
